Bamboo mats are flexible and unlikely to break. However, wooden mats are hard and difficult to roll, making it a struggle to make sushi. While plastic mats may have some flexibility, they can easily become deformed or warped. First get all of your ingredients ready to go. You’ll need to make a batch of sushi rice and slice up your fillings.Arrange a sheet of nori, shiny side down, on a piece of parchment paper (the parchment paper should be a few inches bigger than the nori on the top and bottom). Spoon some of the sushi rice over the nori then use damp hands to spread it in an even layer (my kids love helping me with this!). Prepare sushi rice by rinsing the rice well and discarding any excess water. Put the rice in a rice cooker and add cool water. Place the kombu on top and allow the rice to soak for 20 to 30 minutes.

Transfer the cooked rice onto the sushi oke and spread evenly to allow the rice to cool faster. Pour the hot sushi vinegar over the rice. Use a rice paddle to gently combine the ingredients. Use a hair dryer to help cool the rice which helps prevent it from becoming mushy. Tip into a large wooden bowl, sprinkle on the sushi vinegar and cut through into the rice with a slicing motion with a wooden spatula.
