Thanks to the immersion method, it should be very easy to prepare coffee with this brewing tool, it is also thanks to the filter that the cleaning becomes really simple. The steep-and-release mechanism means that you can accurately control the brewing, and extract the coffee directly into your mug with no mess. Sit the dripper on a cup and the valve at the bottom will open to release the freshly brewed coffee. The clever dripper coffee filter means you get the same strength coffee each time you brew, as it holds the coffee in filter until you put over the jug.

I actually have a bit of a personal love story with the Clever Dripper that goes back to 2015 when I opened and ran the first filter coffee only bar in Amsterdam. For a stronger/heavier brew, add more coffee (+1g), or fro a weaker/lighter brew, use less coffee (-1g). This includes scales, a decanter, freshly boiled water (I use the Barista Hustle recipe that you can find here), a stirrer, a grinder and 22g of your favourite coffee of the moment. The Clever Coffee Dripper takes the best parts from the immersion brewing of a cafetière and the filter of a pour over, creating something totally innovative.

This results in a really clean cup of coffee without the sediment and rich body that is typical of brewing using a cafetiere. The Clever Coffee Dripper features a shut-off valve design that holds the coffee until the entire brewing process is complete and the brewer is placed on the cup opening the valve.

Place the Clever on a surface (we recommend the special plate that comes with your dripper) and add the coffee grounds. When it hits the top of the cup, the valve at the bottom opens up and your coffee starts to draw down through the filter. What makes this equipment unique is that once you add hot water, the coffee brews whilst resting on the filter paper; it only begins to filter when you place it on your cup; when it’s removed, the coffee stops dripping, ingenious.We have recommended a starting ratio of 15g : 250ml water which will produce a really clean and juicy brew - if you prefer more body then try increasing your dose up to 17-18g : 250ml water. This means you can get results out of your coffee that you'd never be able to achieve through other brewers!
