To make the sponge, preheat the oven to 190 degrees celsius (170 if you’re using a fan-forced oven). Grease and line 6 x 20cm cake tins with baking paper. If like me, you don’t have 6 (who does), you’ll have to reline and bake the cakes in batches (which is perfectly okay). Divide some of the white frosting into 4 separate bowls and color them with the food coloring. I chose pink, purple, yellow, and blue to match my party printables theme. I don’t recommend using nonpareils, they can streak the batter, creating either a tie dye effect or even a mixed muddy color if they’re overmixed. Do your best to keep the fillings separate. This will give the more beautiful stripes for the mane. We’re not going for a balayage!
