At a temperature close to the maximum for growth 18°C linolenic acid constituted less than 20% of the total fatty acids, while oleic (20 to 40%) and linoleic (30 to 50%) acids were the major components. The membrane lipid composition changed depending on the temperature of growth of the psychrophilic yeasts.
