In 1996, the hacienda became Tequilera Corralejo, a 100% Mexican company that uses agave from the region with strict quality control processes in the production of Tequila. We also looked at expert and popular opinions alongside the aroma and taste combinations produced during the distilling process. The brand uses only mature agave plants from the Mexican highlands, ensuring a higher concentration of natural sugar. There are between 300-360 bottles produced per batch, aged in some of the finest, hand-selected, lightly charred French white oak barrels for four to five years.A combination of traditional and modern processes are used to produce the tequila–so in addition to a tahona stone, a diffuser is also used to extract the sugar from the agave.
